Presentation of basic differences between vegetable oils, used cooking oils and rendering plants fats as row materials for production of liquid biofuels. Effect of the row material, mainly composition and share of fatty acids together with quality of technological process influences considerably characteristic features of fatty acids methylesters (FAME). Proposal of the European standard stability. Description of standardised method of oxidation stability determination and possibilities of its influencewith respect to the initial quality of used animal and vegetable oils and fets.
