The aim of this work was to comparise proteolytic effect of fruit bromelain isolated from pineapple fruits and effect of stem-bromelain obtained as a standard. Both forms of bromelain can hydrolyze board scale of protein substrates and their mixtures. The best substrate for f-bromelain was gluten, but the hydrolysis was incomplete and resulted in a mixture of peptides with molecular weight 6-12 kDa.
