Original language description
Bacteria of the Lactobacillus genus are an important part of the normal gastrointestinal microflora. Faeces of suckling babies and maternal breast milk appear to be an important source of lactobacilli for dairy industry applications. Bacteriocins are antibacterial proteins that kill or inhibit the growth of other bacteria. The potential use of bacteriocin-producing strains as probiotic and bioprotective agents has recently received increased attention.The object of the study was 15 strains of Lactobacillus collected in the Czech Collection of Dairy Microorganisms (CCDM, Tábor, Czech Republic), 3 recently probiotic strains (Lactobacillus casei LOCK 0900, Lactobacillus casei LOCK 0908, Lactobacillus paracasei LOCK 0919) (Cukrowska et al., 2010), and 12 type and collection strains collected in the Czech Collection of Microorganisms (CCM).
