Carotenoids are natural pigments occurring in plants and many microorganisms, such as algae, yeast and bacteria. Carotenoid yeasts are organisms capable of producing large amounts of biomass, enriched with mono and polyunsaturated fatty acids, with the use of lowcost waste substrates. Due to their antioxidant properties or antitumor and cancer-preventative action in cell lines properties, carotenoids find use in the food, agricultural or pharmaceutical industries. Lipids are used as biofuels and polyunsaturated fatty acids have a positive effect on human health, saturated fatty acids are therefore primarily a source of energy. Carotenoids, coenzyme Q and ergosterol in cells were determined by HPLC/PDA/MS. The lipid content and fatty acid profiles were analyzed by gas chromatography (GC/FID). Yeasts were cultivated on media with different carbon sources – glucose, glycerol and waste fat material from livestock production.
