Abstract of poster presentation from conference TOXCON 2017: Interdisciplinary Toxicology Conference, published in: Interdisciplinary Toxicology, Vol. 10, 2017, Suppl. 1, p.17. The effect of feed with increased content of anthocyanins on the activity of enzymes of the first phase of biotransformation, especially on the enzymes of cytochrome P450 in hens, is studied. The feed dose was represented by spring wheat RU 687-12 with purple pericarp determined by anthocyanins and variety Bohemia as a control without anthocyanins. Total antioxidant capacity in animal plasma was increased by 20% compared to the control variant. The results show that consumption of colored wheat with higher anthocyanin content may affect enzyme activity, especially some forms of cytochrome P450.
