Original language description
Wholemeal flours and grain milling fractions obtained after controlled germination of hulless spring barley varieties were used to analyse content and nutritional properties of selected grain nutrients. Differences in β-glucans, protein, starch and minerals, viscosity of flour suspensions, antioxidant and enzymatic activities and phenolics content were found with regard to genetic origin of the barley sources and used steeping regimes.
