The content of β-glucans and polyphenolic compounds was analysed in six genotypes of hull-less barley (AF Lucius, AF Cesar, Nudimelancrithon, KM 2975, KM 3189, KM 2551) intended for human nutrition. Both compound groups are classified as the substances with a positive effect on human health. To understand how cooking process could influence the content of β-glucans and polyphenols, both raw and cooked grains have been analysed. The results of the study should contribute to finding the gentle processing technologies with the aim to reduce the degradation of health beneficial compounds during processing.
