The main task of this work is to develop dairy-like functional foods (desserts, spreads, dressings, fermented and probiotic beverages) based on rice. Target consumers of these foods are patients on low-energy diet, low-protein diet, patients suffering from lactose intolerance, allergy to cow milk proteins or phenylketonuria and people interested in healthy way of life, vegetarians and vegans. Suitable lactic acid bacteria starter cultures (including probiotics) were selected by means of measuring of growth curves, pH curves and organic acid profiles.
