    Biogenic amines in beers

  • Original language description

    Malt is source of agmatine, putrescine, spermidine and spermine in beers, while tyramine, histamine and cadaverine are amines formed during the main fermentation by contaminating lactic acid bacteria. Amine levels range widely. Tyramine, with levels often exceeding 10mg/l , including non-alcoholic beer, seems to be the main amine with deleterious effects for consumers treated with drugs inhibiting monoamine oxidase.

    Slad je zdrojem agmatinu, putrescinu, spermidinu a sperminu v pivu, zatímco tyramin, histamin a kadaverin jsou aminy vytvářené během hlavního kvašení kontaminujícími mléčnými bakteriemi. Obsahy aminů kolísají v širokých mezích. Tyramin, jehož obsah častopřesahuje 10 mg/l, a to i v nealkoholickém pivu, se jeví jako hlavní amin se škodlivými účinky pro osoby léčené léky inhibujícími monoaminoxidasu.
