The contribution deals with the assessments of antifungal potential of thermostable proteins from three potato cultivars (Solanum tuberosum L.) David, Marabel and Westamyl differ in the market and maturity and comparison of two potato fruit juice alternatives differing in processing temperature. Combination of pH adjustment and high temperature (80 °C) or pH adjustment only was used for protein isolation. Isolated proteins were detected by peptide SDS-PAGE in range from 6 to 14 kDa and in ranges 14 and17 kDa in the sample of the thermally untreated potato fruit juice. Three different concentrations of protein samples were applied to three different varieties of phytopathogenic fungi Alternaria solani, Fusarium solani and Rhizoctonia solani. The inhibition of mycelial growth was evaluated after 24 hours of growth at 16 °C on digital photos by special software using the method of measuring the inhibition area.
