Original language description
Barley, malt and hop quality are of fundamental importance to reach good quality of beer. Classical methods of analysis require often tedious, laborious and expensive analysis. Matrix Assisted Laser Desorption Ionization Time Of Flight Mass Spectrometry(MALDI TOF MS) is rather novel technique able to detect with excellent sensitivity various compounds from low up to quite high molecular weight proteins. The work deals with examination of MALDI TOF MS possibilities for detection and identification of various analytes in raw brewery materials and beer, e.g. detection of mycotoxins. Selective identification of different analytes is possible. MALDI TOF MS instrumentation enables highly sensitive and fast analysis and/or detection with very low sample amount.

Kvalita ječmene, sladu a chmele je základem pro kvalitu piva. MALDI TOF MS je poměrně nová technika schopná určovat s vynikající citlivostí hmotnost vysokomolekulárních proteinů. Práce se zabývá zkouškami použití techniky MALDI TOF MS pro detekci a identifikaci různých analytů v pivu a jeho surovinách, např. detekcí mykotoxinů. Je možná citlivá detekce různých látek.
