Is gushing in beer associated with mycotoxins?
Original language description
The occurrence of DON in samples of pale, dark, draught, larger and non-alcoholic beers was studied. DON content in beer samples ranged from <0.25 ? 19.19 ?g/l. Beers with DON higher than 2 ?g/l were selected for further study. Contents of OTA, oxalatesand gushing level were studied in these beer samples. OTA content ranged from 4.8 ? 194.6 ng/l, oxalate content was 1.8 ? 39.0 mg.l-1 and gushing level 0 ? 264 ml. Beers were split according of the gushing level into three groups.
