Czech beer and its effects on human health

Beer is a mixture of different macromolecular substances ? proteins, carbohydrates, lipids and nucleic acids. From other important compounds beer contains polyphenols, hop bitter compounds, vitamins, amino acids, mineral substances, soluble dietary fibers, phytoestrogens, alcohol and other ones. This composition represents a physiologically well-balanced isotonic or slightly hypotonic solution. From the nutritional point of view the valuable substances included in beer are in optimal acceptable combination for human being. Beer can thus be considered as a suitable part of human nutrition. The character and authenticity of Czech-type beer, which was accorded the protected geographical indication ?České pivo? by the EU, has been discussed many times. There were repeatedly found differences in chemical and sensorial characteristics of Czech beers in comparison with the other Pils-type beers.
