The content of oxygen is one of the main factors affecting microbiological stability of beer. The current trend in bottling technologies accentuates lowering of oxygen concentration in finished beer to a minimum. Beer thus becomes a medium in which strictly anaerobic bacteria can thrive. Strictly anaerobic bacteria adjusted to the brewery environment include genera Megasphaera, Pectinatus, Selenomonas and Zymophilus, currently classed into the family Veillonellaceae. The aim of this study was to developSelenomonas lacticifex-specific PCR assay and also to evaluate the specificity and reproducibility of the assay in real brewery samples.37th Brewing and Malting Conference.
