Technological quality of spelt from ecological growing
Original language description
Milling and baking quality of selected set of spelt wheat varieties growed in ecological growing systém was evaluated and compared with the high-quality czech breadmaking variety of common wheat Hana. In comparison with the check variety Hana spelt wheatvarieties showed i higher value of TKW, ash content, protein content and wet gluten content. Quality of gluten evaluated with sedimentation value, was at spelt varieties lower in comparison with the check variety.
