  • Original language description

    Technological quality of several varieties of the spelt wheat grew in ecological growing system was studied and compared with the check variety of common wheat Hana. For spelt wheat varieties was in compared with common wheat typical especially higher protein content, wet gluten content and ash content in grain, but level of qualitative signs characterized quality of protein complex, as Gluten Index and SDS-test was lower.
