Evaluation of share of lean meat in carcass belly of pig with respect to sex, genotype, slaughter weight and share of lean meat in slaughter half
Original language description
The study investigated bellies (n=75) of standard hybrid pigs of slaughter pigs. In the presented paper is described lean meat share in the belly with respect to genotype, sex, weight of carcass belly and average daily gain. Based on the results found the following conclusions can be drawn: The total lean meat share in the pig carcass does not correspond directly to lean meat share in the belly. Lean meat share depends on pig-genotype. Although the three examined genotypes had the same total body lean meat share (54-55 %) the average lean meat belly share were 50.04, 50.23 and 54,35 % in relation to genotypes of hybrid pigs. The lean meat belly share depends on sex. The barrows had lower belly as well as total lean meat share in their carcass body. Thepigs with high growth intensity have lower lean meat share. The higher weight of belly and carcass the lower lean meat share of belly and total lean meat percentage in the pig carcass.
