Original language description
The autors studied an extension of the sources of plant prodicts for the diet in coeliac disease. In a collection of crops , they exminied the contents of total and protein nitrogen, the composition of protein fractions, the electrophoretic composition different protein fraction and the immunological determination of the gliadin amount using ELISA twest. Gliadin content below 10mg per 100g of sample was found in the follwing species: amaranth, quinoa, sorghum, millet,,foxtail millet, broadrood and buckwheat.
