Listeria monocytogenes is a pathogenic bacteria that causes serious food-borne illness. Nowadays, the consumption of prebiotics, which are often added to foods and dietary supplements to support human health and prevent the invasion of food-borne pathogens is recommended. Prebiotics are substrates selectively used by host beneficial microorganisms. However, little is known about the effect of prebiotics on the growth of Listeria monocytogenes. The aim of this study was to evaluate the growth ability of Listeria monocytogenes on prebiotic oligosaccharides as beta(1,3)-D-glucan, inulin, FOS, GOS, lactulose, raffinose, stachyose, human milk oligosaccharides (HMO) and fucosyllactose. Four strains of Listeria monocytogenes were used in the testing, which included the 4 most common serotypes found in food. The results showed that Listeria monocytogenes is able to use prebiotic polysaccharides (beta(1,3)-D-glucan and inulin) and some prebiotic oligosaccharides (FOS and GOS) for its growth, which are the most used prebiotics for dietary supplements.
