The aim of starch refinement is the most possible removing of suspension containing fine particles (turbidity) and dissolved high- and low-molecular non-sugar impurities.The eventual replacement of conventional refining techniques by membrane types wouldcut amount of waste material due to the reduction of used filtration aids, which cannot be utilised any further. For this purpose , samples of commercial hydrolysates from wheat starch obtained by acid and enzymatic hydrolysis were treated by ultrafiltration on different filtration units equipped with varous inorganic membranes (Membralox, Tami). The main pore size of used membranes was 20-100 nm. The result showed that the amount of macromolecules removed by ultrafiltration was so low. The ultrafiltration affected mainly proteins and colour compounds were decolourised by 60-74 %.
