This work was directed to study the effect of physical (heating, freezing) and chemical (EDTA, mixture of organic acids, NaCl, nisin) stress factors to growth and viability of Gram-negative bacteria (Escherichia coli DMF 7502, Pseudomonas sp. DMF 9010) and yeasts (Candida sp. DMF 1021, Kluyveromyces marxianus var. marxianus DMF 1005), and to possibilities of detection of sublethally injured bacteria and yeasts.
