    The dependence of pH on the antimicrobial activity fatty acids and their derivatives polyols

    The antimicrobilal properties of fatty acids with chain lenght varied from 10 to 14 carbon atoms, including odd homologes and their derivatives with polyols were tested. Bacillus cereus, Lactobacillus rhamnosus and Fusarium culmorum were used as a indicator strain. The dependence of pH on antimicrobial activity of fatty acids and their derivatives was evident. The lower pH the higher antimicrobial activity.

    Vliv pH na antimikrobiální aktivitu mastných kyselin a jejich derivátů s polyoly

    Byl sledován antimikrobiální účinek mastných kyselin v řadě dekanová až tetradekanová kyselina, včetně lichých homologů, a jejich derivátů s polyoly (glycerol, glukosa a sacharosa) vůči Bacillus cereus, Lactobacillus rhamnosus a Fusarium culmorum. Byl prokázán vliv klesající hodnoty pH na vzrůstající aktivitu těchto látek.
