Food borne microorganisms display a broad spectrum of resistance to antimicrobial agents. Resistance may be better due to biofilm formation on many types of surfaces (stainless steel, plastic materials, glass). Biofilm is a functional and biologically active matrix of microorganisms attached to a surface and is embedded in the extracellular polymeric substances produced by the microorganisms.
