    The objective of this study was to find the ways of imaging and scanning of detailed images of iridescence area to obtain the images usable for video image analysis. Iridescence was evaIuated on ham surface during drying up. Video image anaIysis verifiedthat colour spectrum is changed during drying up of ham products. The water content of meat products has inf1uence on the occurrence of iridescence. Spectrophotometry was not suitable method for examination of iridescencebecause it does not give correctresults of colour spectrum of iridescence. It measures only colour of whole scanned area.
