Analysis of ?-Glucans from different sources by thermal analysis
Original language description
?-Glucans are widely used as soluble fibre in human diet. They are linear or branched polysaccharides formed from ?(1,3), ?(1,4) and ?(1,6) bound glucose units. Linear ?-glucans with repeating fragments of ?(1,3) and ?(1,4) oligosaccharides are containedin cereals (higher contents are in oat and some varieties of barley). Moreover branched fungal ?-glucans contain ?(1,6) glycosidic linkage and they are common in yeast or mushroom cell walls. Polysaccharides and their derivatives can be distinguished bythermal analysis according to the mechanism of their decomposition. Thermogravimetry (TG) and differential scanning calorimetry (DSC) are commonly used thermal methods. TG monitors mass changes of sample depending on constant or increasing temperature.DSC measures the heat effects, caused by chemical or physical changes, as a function of temperature or time while the substance is heated at a uniform rate.
