    Near-infrared prediction of milling and baking parameters of wheat varieties

    NIR spectra of 228 samples of wheat were used for milling and baking features prediction. Calibration equations were obtained with partial least square (PLS) regression analysis of conventional laboratory analysis values on 168 selected NIR spectra usingWinISI computer software. Prediction of flour extraction, Zeleny sedimentation and protein content in particular gave a very good accuracy. The results indicate that NIRS can also determine some rheological traits (deformation energy, gas volume and specific loaf volume) at least with a screening performance.

  • Czech description

    NIR spektra 228 vzorků pšenice byla použita pro predikci mlynářských a pekařských znaků zrna a mouky. Kalibrace byla vytvořena z vybraných 168 spekter metodou PLS v programu WinISI. Predikce výtěžnosti mouky, hodnot Zelenyho sedimentačního testu a obsahubílkovin byla velmi přesná. Výsledky predikce reologických vlastností (alveografické energie, objem kvasných plynů a měrného objemu pečiva) by mohly sloužit alespoň pro screening.
