Original language description
When soaked in water, the fibre-rich surface layers of flaxseed hull release mucilaginous material. It was characterized as a mixture of acidic and neutral polysaccharides with some proteins. Flaxseed mucilage has drawn much attention because of its physical properties and health benefits. Temperature was found to be the key factor of the flaxseed mucilage integrity. This work is devoted to comparison of flaxseed mucilage obtained by various ways of drying/precipitation in terms of structural integrity and physical properties using appropriate spectroscopic, separation, thermal and rheological methods.
