Original language description
Galactooligosaccharides (GOS) are applied in the food industry due to their beneficial properties. Currently, GOS are obtained via transgalactosylation reactions of lactose using ?-galactosidases. We compared three soluble commercial ?-galactosidases (Maxilact LGI 5000, Saphera 2600 L and NOLATM Fit 5500) on GOS formation at 40°C with initial lactose concentration of 500-550 g?L-1. Our results revealed influence of the commercial enzymes on GOS synthesis and can be important for the further investigations.
