Original language description
After the separation of mineral and vegetable admixtures and after washing, the beets are cut on choppers into sweet cuttings, which are extracted countercurrently with warm water. Two physical processes are involved in juice extraction: free extraction and diffusion. The free extraction of beet juice depends on the surface of the cuttings and the degree of opening (damage) of the beet cells by cutting. In practice, this is about one third of the cells. The remaining two-thirds of the sugar is obtained by diffusion of the beet juice substances through the dead cell wall.
