Analysis of MCPD and Glycidyl Fatty Acid Esters in Refined Plant Oils by Supercritical Fluid ChromatographyHigh-Resolution Mass Spectrometry

  • Original language description

2- and 3-chloropropane-1,2-diol (2- and 3-MCPD) and their fatty acid esters (2- and 3-MCPDE) together with glycidyl fatty acids esters (GE) belong to a group of process-induced contaminants. They are formed in high temperature environments and most commonly occur in refined vegetable oils. With regards to the documented toxicity of free 3-MCPD (IARC group 2B) and glycidol (IARC group 2A), since 2021 maximum limits for GE and 3-MCPDE are enforceable in the European Union. Hence, the requirements for adequate analytical methods is constantly increasing. The aim of this study was to develop a method enabling a rapid, simultaneous determination of 9 3-MCPDE and 7 GE in vegetable oils and fats, with the use of supercritical fluid chromatography coupled with mass spectrometry (SFC-MS). Contrary to a routine GC-MS method the sample throughput was greatly increased. The recovery, repeatability and limits of quantification required by legislation were met for majority of analytes.
