Application of β-galactosidase for production of oligosaccharides.
Original language description
β-galactosidase, with the systematic name β-D-galactoside-galactohydrolase (EC 3.2.1.23), belongs to the group of hydrolytic enzymes cleaving galactose from galactosides. This enzyme is able not only to cleave galactose but also to bind saccharide units and chains and thus create galactooligosaccharides. The enzyme does not show absolute specificity and thus, under specific conditions, it could produce novel oligosaccharides containing also different monosaccharide units than galactose.
