Many different bacteria can produce exopolysaccharides as a defence against adverse environment. In this work, exopolysaccharides producing lactic acid bacteria were isolated from breast milk, raw milk, sourdough and dairy products. Isolated bacteria were screened for exopolysaccarides production.
