Preparation of Artificial Garlic Cell by Spray Drying Process
Original language description
Lack of newly developed antibiotics and the escalating emergence of resistant bacterial strains are both reasons why the new alternative approach preventing bacterial infection is needed. Garlic cell represents natural self-defence mechanism, which is thanks to the unstable nature of enzymatically produced active substances resistant to the emergence of bacterial resistance. Enzyme (alliinase) comes into contact with the substrate (alliin) upon disintegration of garlic cell producing active compound (allicin). The aim of this work is the preparation of powder materials with immobilised enzyme and substrate utilizing spray drying process, the study of the influence of process parameters on enzymatic activity and testing of antibacterial activity on selected bacterial strains.
