    Liquid chromatographic procedures employing two derivatisation reagents dansylchloride and phthalaldehyde (OPA) were compared and applied for the determination of biogenic amines in meat products during fermentation and long term storage. Both methods give the similar results in terms of limits of detection, repeatability, recovery and accuracy. Secondary amines (spermine and spermidine) do not react with phthalaldehyde thus their LC determination after derivatization with dansylchloride is only possible. The content of secondary amines during fermentation and/or long term storage is nearly constant or slightly decreases, thus their determination in both cases is not necessarry. Liqiud chromatographic procedure emloying derivatization with phthalaldehyde (OPA) is faster, much simpler in term of pretreatment of samples and it can be fully automated using an inteligent autosampler.
