    Content of vitamin E in barley caryopses and malt

  • Original language description

    Barley is a natural source of many chemical compounds with a positive effect on the human organism -- these are mainly the substances with antioxidant effects, vitamins and certain forms of dietetic fiber. Some of these substances are involved into the processes that reduce risks of cardiovascular and other civilization diseases. In future, for food purposes, special varieties with genetically conditioned enhanced content of food fiber (especially soluble beta-glucans), vitamin E (in a form of vitamersof tocopherols and tocotrienols) and essential amino acids (especially lysine and threonine) will find the best use. Vitamin E is one of the most important antioxidants in the organism. Unlike vitamin C, it is soluble in fats, which is of special importance as free radicals in the organism damage cell membranes and lipoproteins with a lower density that contain fats in their molecule.     Vitamín E je jeden z nejdůležitějších antioxidantů v organismu. Vitamíny rozpustné v tucích jsou zvláště důležité při vychytávání volných radikálů v organismu. Vitamín E, C a beta-karoten působí preventivně proti karcinomu plic, žaludku a tlustého střeva. Positivní role vitamínu E byla zjištěna i u koronárních chorob. Rostlinné oleje jsou hlavním zdrojem vitamínu E, ale velké množství je i v cereáliích - v ječmeni, rýži, pšenici, ovsu a tritikale. Vitamín E se vyskytuje ve formách isomerů: alfa-, beta-,gama-, delta- tokoferoly a tokotrienoly.
