The work deals with effect of storage temperature after draw goaty milk on renneting, quality of curd, it's weight, dry matter of goaty cheese and observing changes in composition of chosen parameters of fresh goaty milk during a period. The goal of thiswork was to review the impact of cooling and freezing of fresh goaty milk, milk stored with temperature lower than 4°C, milk stored at the level of --18 °C for two weeks. These meassurements was made with samples immediately after tempering on 37 °C than consequently fall of to 20 °C and with samples which incubated for 1 an hour at 37 °C and consequently fall of to 20 °C. Eight samples of goaty milk was observed at the beginning and at the ending of lactational period. It was statistically detected, that the milk storage temperature didn't have conclusive effect on tracked characteristics.
