In this study, we assessed the impact of composition and processing parameters of corn grit-propylene glycol extrudates on their physicochemical characteristics. A twin-screw extruder was used for the extrusion process. Parameters like the amount of glycol, processing temperature, feed moisture, screw speed, and feed rate were optimized using the central composite design for various physicochemical characteristics (Density, expansion, WAI (water absorption index), WSI (water solubility index), porosity and textural properties). WAI and WSI were most affected by amount of added glycol. It indicated the degree of starch jellification during the extrusion process. Porosity was studied to understand the impact on sensory qualities of extrudates. Based on reverse regression coefficient values, the response surfaces were prepared for optimizing individual characteristics. The addition of propylene glycol can be a valuable supplement to the extrusion process of plant materials and contribute to the extrudates quality improvement.
