Occurrence of lactic acid bacteria in raw milk
Original language description
The aim of this study was to monitor occurrence and the genus specifity of lactic acid bacteria in the samples of raw milk. Together 128 samples of raw milk were collected from several dairy farms in the Czech Republic, from which were isolated 176 lactic acid bacteria. These isolates were identified by the genus-specific PCR method for 5 genera. From 85 identified isolates most of 62% were identified as Lactobacillus spp., 26% as Enterococcus spp., 10% as Leuconostoc spp. and from genus Weissella and Pediococcus were presented only one isolate from each. Isolation and identification of lactic acid bacteria from raw milk may be advantageous for the bacteria selection in further development of dairy products.
