The aim of the study was to evaluate the incidence of pathogens on organic chicken skin originating from a small poultry slaughterhouse and stored for 14 days at 2°C aerobically (control) and in modified atmosphere MAP-O2: 80% O2 : 20% CO2 and MAP-N2: 70% N2 : 30% CO2. Campylobacter jejuni survived well during storage; in total, it was found in 97% of chicken halves (94/96). No Salmonella spp. and L. monocytogenes were detected during the whole experiment (0/96). Survival of Campylobacter spp. was more inhibited by the MAP-N2 than by the MAP-O2 after 14 days of refrigerated storage.
