Rapid Determination of Isomaltulose in Food Supplements by HPLC with ELS Detector
Original language description
Isomaltulose (Palatinose) is a disaccharide, an isomer of sucrose, produced from sucrose by a biotechnological process using bacterial isomerases. Unlike sucrose, it lowers the glycemic index and shows additional health benefits. Recently, it was shown to improve hyperglycemia in vivo. Therefore, it can be found in nutrition for diabetics and in healthy food supplements (e.g. against tooth decay).
