    Influence of pH on antimicrobial activity of organic acids against rabbit enteropathogenic strain of Escherichia coli

    Susceptibility of strain C6 (O128 serogroup) to fatty acids, oleic, citric, lactic and fumaric acid was tested at 5mg/ml. In the near-neutral pH region caproic and caprylic acid reduced counts of viable cells by 3 and 6 orders, resp. At lower pH (pH=5.3)caprylic acid reduced counts of E. coli below 100/ml. In a weakly acid environment also capric acid was bactericidal. Citric acid, but not other acids tested, was at pH 5.3 weakly bactericidal. At low pH (2.2 -2.5) growth of E. coli was inhibited both in control and treated cultures.

    Testovali jsme citlivost kmene C6 bakterie Escherichia coli (sérotyp O128) k mastným kyselinám včetně kyseliny olejové, kyselině citronové, mléčné a fumarové. V oblasti neutrální (pH = 6,5) kyselina kapronová a kaprylová snížily počty živých buněk o 3 a6 řádů. Za nižšího pH (pH = 5,3) byla baktericidní také kyselina kaprinová. Při tomto pH snížila kyselina kaprylová počty živých buněk pod 100/ml. Z dalších kyselin měla slabý účinek jen kyselina citronová. Za nízkého pH (2,2 ? 2,5) byl růst bakterie inhibován i v kontrolních kulturách.
