In this paper, the methodology and some results of an analysis of resistive and dielectric heating occurring inevitably during microwave (MW) processing of oil in water (O/W) and water in oil (W/O) emulsions, are described. A well proven commercial finite-element tool was used in order to perform transient coupled electric field - heat transfer simulations of emulsion samples. In these simulations, available temperature - dependent models of the two main emulsion components (water and oil) physical properties and process parameters of two different industrial MW processes were considered. The applied frequencies of the MW electromagnetic field are, dependent on the particular MW process, 915 MHz or 2450 MHz.
