    The inhibitory effect of 1-monoglycerides (monoglycerides of capric, undecanoyl and undecenoyl acids) at a concentration of 25 ? 1500 mg/l on bacteria which can be food-borne pathogens and/or food-borne spoilage bacteria (Bacillus cereus, Bacillus subtilis, Enterococcus faecalis, Micrococcus luteus, Staphylococcus aureus, Citrobacter freundii, Escherichia coli, Proteus mirabilis, Salmonella enterica ser. Enteritidis and Pseudomonas aeruginosa) was observed within a model system in vitro. The data were modelled through a Gompertz equation. Monoglycerides inhibited mainly the growth of gram-positive bacteria, which was shown by the extended lag-time, decrease in specific growth rate and total decrease in cell density compared with the control broth without MAG. Within the 1-monoglycerides tested, monoglycerides of capric and undecanoyl acid showed the best antibacterial effects on gram-positive bacteria.
