The characteristics of mare?s milk are of particular interest in dairy science because of its essential composition. In the last a few years the mare?s milk has been an accurately researched and consumed for human health and fundamental food. The composition of mares? milk is similar to human milk, in particular regarding its low nitrogen content, its low casein-to-whey ratio, which is rich ?-casein, Igs and lysozyme, and its high content of lactose. In addition, several characteristics of mare milk, such as a high level of polyunsaturated fatty acids and free fatty acids, low cholesterol content and high vitamin C content, are significantly different from that of cow?s milk. Therefore mare milk is becoming increasingly popular as an alternative treatment of various diseases.
