Arsenic is well known as a toxic element that can occur in foodstuffs in several forms. These forms have for humans different toxicity, therefore is total amount of arsenic in the foodstuffs insufficient information. For humans is dangerous accumulationof arsenic in food chains. In the framework of this work was created a procedure for the determination and speciation of arsenic compounds in food samples like fishes, which has been optimized. The procedure involved the use of high performance liquid chromatography (HPLC) method and detection by atomic fluorescence spectrometry with hydride generation technique (HG-AFS). As comparison method was used mass spectrometry method with inductive coupled plasma (ICP-MS) for determination of total arsenic content. The procedure has been used for the determination of arsenic forms in samples of fishes.
