The Content of Minerals, Polyphenols and Antioxidant Activity of Different Onion Cutivars
Original language description
The aim of this study was to determine the content of phosphorus, magnesium, sodium, potassium and calcium, as well as the content of total polyphenols and antioxidant activity in white, yellow and red onion cultivars. It is evident from the results, that the highest content of all minerals was in ´Solution F1´ cultivar, and cultivar ´Fireball´, except for phosphorus, where the content was the lowest of all cultivars. Polyphenols content ranged from 1.41 to 1.65 g.kg-1 and antioxidant activity from 1.50to 1.84 g.kg-1 and it is slightly higher in red onion cultivars in comparison with white and yellow cultivars. The high correlation is also evident between the content of polyphenols and antioxidant activity and the median correlation between magnesiumcontent and antioxidant activity.
