Original language description
The study aimed to prepare a double emulsion and its subsequent characterization. The particle size was studied by dynamic light scattering; functional properties of samples were investigated by differential scanning calorimetry and rheology. It was found that the particle size of the inner phase and the double emulsion was similar to a large extent; (380.2 ±8) nm was detected for the inner phase and (511.1 ± 10) nm for the double emulsion. Curcumin’s particle size in oil was almost three times higher. Both emulsions, the inner phase (O/W) and the double emulsion (O/W/O) exhibited pseudoplastic behavior.
