The International Malting and Brewing Symposium, 17 - 20 April 2021, Leuven, Belgium. 2021. p. 106. Saaz hops as a variety among regional populations, that hes been developing in Bohemia and Moravia. The significant influence of climatic and weather conditions on the yield and alpha acid content of hops is generally accepted. Especially high temperatures during the flowering and cones forming are very poorly tolerated by most varieties. Irrigation is an important stabilizing factor for profitable hop cultivation. A large part of hop gardens in the Žatec and Ústí nad Labem regions are located near large rivers. Some growers are tackling a critical period of lack of rain with water from wells, which they accumulate in prefabricated above-ground reservoirs. Regular renewal of hop gardens with high-quality seedlings free of viruses and viroids is another important measure to ensure the sustainable cultivation of Saaz hops. Healthy hops cope with unfavorable weather conditions much better than older ones. Year-on-year fluctuations in alpha acid content cannot be avoided in the future either. This fact is not a serious problem for the brewing industry, as brewers are able to handle such situations. Serious problem of global warming are extreme weather events such as torrential rains, hailstorms and strong winds.
