The polysaccharides beta-glucans occur as an important component of the cellular walls in some microorganisms,such as yeast and mushrooms. There are several isolates and supplements available commercially that contain beta-glucans. These polysaccharidesstimulate the immune system, modulating humoral and cellular immunity. A set of isolates and food supplements was evaluated based on the content of beta -glucans determined with Megazyme kit K-YBGL. The purity of the products was verified with the aid ofspectrometric methods.
