Nowadays plant seed mucilages are attractive for various applications in food, pharmacy and cosmetics because of their unique rheological properties. Flaxseed (Linum usitatissimum) mucilage demonstrates high viscosity and water-holding capacity, good emulsifying properties. At high concentrations it behaves as viscoelastic system. Highly branched arabynoxylan is the main component of this mucilage, so the composition and structure of this polysaccharide could be crucial for physical properties of the whole material. In this work pure arabinoxylans were isolated from flaxseed mucilages of ten cultivars. The composition, structure and rheological properties of isolated polysaccharides were characterized by the appropriate spectroscopic (FTIR, Raman, NMR), separation (GPC, GC) and rheological methods. Multivariate statistical methods (HCA, PCA) were used to evaluate genetically determined di↵erences between the individual arabinoxylans.
